What you need :

  • 4 peaches
  • 40 g of pistachio
  • 6 pastry sheets
  • 2 pinches of cinnamon powder
  • 10g butter
  • 1 teaspoon of orange blossom water (optional)
  • 1 teaspoon of icing sugar

The realization: Peel the peaches, cut them in half, then cut each half into three quarters. Add (if you wish) the orange blossom water. Chop 10 g of pistachios and mix them with icing sugar and a pinch of cinnamon in a salad bowl. Melt the butter, and brush the pastry sheets with it using a brush.   • 150 g of sugar
  • 1/2 vanilla bean
  • 1/4 water

The realization: Peel and cut the apples into quarters. Use apples that don’t crush when cooked. Throw them in a hot syrup made of water and sugar and half a vanilla bean. Let cook gently for 20 to 30 minutes. Remove the apples. Reduce the syrup. Pour the syrup over the apples. Serve cold.
