Microbial proteins, for example, which could constitute a new source of food for breeding pigs: HERACLES makes it possible to precisely evaluate the smell of these proteins, in order to determine whether or not they are accepted by pigs.
HERACLES is also used for the study of new healthy and sustainable food sources. It thus makes it possible to evaluate the impact of insect oils on the sensory properties of the final product (cakes, crisps, crackers, etc.), according to several parameters: species of insects selected, deodorization process, comparison with a recipe based on vegetable oil.
