  1. Wash and peel the asparagus and cut off the woody ends. Cut the peeled asparagus into bite-sized pieces or wide slices. Set the asparagus heads aside separately.

  2. In a pot with a lid, bring about 1 liter of water to the boil with 1 teaspoon of salt and 1 teaspoon of sugar. Add the asparagus pieces (without heads) and simmer covered for 8-10 minutes, depending on the thickness of the spears.   3. Meanwhile, for the dressing, mix the vinegar, mustard and oil in a bowl. Season with salt, pepper and a little sugar.

  4. Drain the asparagus and let it drain briefly. Mix the asparagus with the dressing and let cool.

  5. Wash the chives and parsley, shake dry and chop finely. Fold the chopped herbs into the lukewarm asparagus and let the salad steep for at least 1 hour. Season again before serving.
