Baking without an egg – how it works

Eggs have two properties that are very useful for baking: On the one hand, they bind the doughso that it sticks together on the other hand, loosen it up and ensure that it becomes nice and fluffy. However, that doesn't mean that eggs are irreplaceable when baking – there are numerous herbal products that can serve as egg replacers.

Bake without egg with egg substitute powder

Egg substitute powder is ideal to give the dough the necessary binding. As a rule, it consists of lupine flour and starch and has to be mixed with a little water. Some products also contain some turmeric, which turns the powder yellow. To replace an egg in the recipe, you have to mix a teaspoon of the powder with about 30 milliliters of water.

Bananas as an egg alternative

If you want to do without an egg when baking, you can also choose a ripe banana: Half a mashed banana replaces an egg. However, you should note that their own taste does not go well with every pastry.

Soy and locust bean gum

Locust bean and soy flour are water-soluble and can be used as a binder in baking. To do this, you just have to mix a tablespoon of the flour with two tablespoons of water and add it to the batter.

Baking without egg with applesauce

Applesauce ensures that the dough becomes juicy even without an egg – it is particularly suitable for cakes or waffles. The advantage of applesauce is that its taste is almost completely lost when baking. You should only note that it is already very sweet and may use less sugar than specified in the recipe.

Baking powder and baking soda as an alternative to eggs

To make the cake nice and loose even without an egg, you can add a little more baking soda or baking soda to the dough. They serve as raising agents and ensure that the dough rises. A dash of mineral water is also ideal for this function!

Silk tofu

For many desserts or quiches, silk tofu is a good alternative because it has a creamy consistency and sticks like an egg – also ideal for cheesecakes. 60 grams of pureed silk tofu replace an egg.
