Biscornu, the caterer that gives a future to the disabled

FIGARO TOMORROW – The Parisian has just won the reception contract for Matignon and affiliated institutions.

Its name, Biscornu, reflects the company’s history, full of pitfalls and successes. Originally? A father, Olivier Tran, who wants in 2019 to give a future to his 13-year-old son, severe autistic without a place in a specialized institution. “I couldn’t accept that he was in a state of social death and spending his time watching suicide videos”explains this ex-executive of Alcan who has “everything dropped overnight” to give his son a future.

He then studies different models to pass his “scream of pain” to the greatest number. “It’s a political story that has turned into an entrepreneurial adventure”explains this Ile-de-France resident who then turned to food, “sector that speaks to everyone”. Precisely on an excellent caterer where all the dishes will be made and served by young disabled people, including his son Alexandre.

The success of Biscornu is due to the originality of its model based on a learning method, baptized “sharpened”, for “allowing people with no schooling to learn”. Olivier Tran has also asked many companies in the Ile-de-France region (Mazars, Scor, MSD, Chateauform, etc.) with restaurants with kitchens to open their doors in the afternoon in order to be able to train his apprentices. Ditto for the big names in collective catering (Sodexo, Elior, etc.) who support young disabled people every day.

Olivier Tran has finally asked chefs to concoct “original recipes that do not degrade the environment” (100% organic, local, etc.) and canvassed the largest companies to present to them its catering offer which falls within their CSR policy. With success, Biscornu now works for more than 70 groups such as Orange, Natixis, Chanel, Bpifrance, the French Rugby Federation, FDJ… and generates no less than 120,000 euros in turnover per month.

Better still, with its 28 employees on permanent contracts and its forty servers that can be monopolized depending on the orders, all disabled, the company has just won the reception contract for the hundred or so institutions attached to Matignon (Cnil, Council of State, Cese …) which will guarantee him 450,000 euros more turnover per year, the equivalent of four months of activity.

“We have passed a course”welcomes Olivier Tran, who began by selling to individuals, after the first confinement in 2020, his jars consigned to the Hauts-de-Seine markets and is already preparing to raise 1.5 million euros in the coming months. .

His goal? Finance the deployment of a 1200 m² laboratory (under construction) in Colombes for its research and production of dishes and cocktails. “We need to invent a flagship product, like McDo’s Big Mac”, reports the entrepreneur, who squats every afternoon in the municipal kitchens for the schools of Colombes and Clichy. He then wishes to turn to direct sales, in particular by opening Biscornu shops in the region or by marketing his dishes in signs such as Biocoop, Monoprix, etc.
