Boiling tomatoes: explained step by step

Boiling tomatoes works very easily and is ideal for preserving leftover tomatoes. We explain step by step how to do it.

Boil tomatoes: the ingredients

  • 2 kg of tomatoes
  • 1.5 tsp salt
  • approx. 2 l water
  • Herbs of your choice (e.g. basil, thyme, rosemary or oregano)
  • Mason jars

Boil tomatoes: step by step

  1. Wash the tomatoes thoroughly, cuts a cross at the bottom, put them in a colander and then pour hot water over them. By blanching the water gets into the tomatoes.
  2. Before you can boil the tomatoes, you have to peel the fruit. It is best to use a potato skewer and a sharp knife. In addition the mason jars must be sterile: It is best to rinse them with hot water or put them in boiling water so that all bacteria are killed.
  3. Then you fill the tomatoes in the glasses – you should make sure that still about two inches of space to the edge stay.
  4. In the next step you have to dissolve the salt in water and the broth up to about an inch below the edge pour into the glasses. Then you can add herbs as you like.
  5. Closes the lid airtight and places the mason jars in a large saucepan with water, leaving the jars about three centimeters deep in the water stand. Now you should boil the tomatoes for about 30 minutes.

Boil tomatoes in the oven

There is also the option of pickling tomatoes in the oven. For this, steps 1-4 remain the same, but after you have closed the mason jars, you put them in a deep casserole dish or a drip pan. At 90 degrees you can cook the tomatoes in the oven for half an hour.

Preserve tomato sauce

Alternatively, you can preserve the tomatoes by boiling down a tomato sauce, which you can process later (for example, for our recipe pasta with tomato sauce). The following ingredients are required for this:

  • 1.5 kg of tomatoes
  • 2 tablespoons oil
  • 2 cloves of garlic
  • 1 tsp salt
  • Herbs of your choice

Step 1: Cut the tomatoes into small cubes and remove the stalk. Peel and chop the garlic or press it through a garlic press.

Step 2: Heat the oil in a large saucepan and braise the garlic in it. Then add the tomatoes, salt and herbs and let the sauce simmer over medium-high heat for about an hour. Stirring occasionally.

Step 3: Then remove the herbs from the sauce, mash them again if necessary and then fill the hot tomato sauce into the sterilized preserving jars. Again, you should leave about an inch of space to the edge.

Step 4: Now you can wipe the glasses with a cloth, close the lid airtight and store the boiled tomato sauce in a cool and dark place after cooling.

Boil tomatoes: you should note that

You should only use fresh tomatoes for the preservation, the are firm and have no pressure points. Even soft fruits or those with rotten spots are not suitable for waking up. The canned tomatoes are in airtight jars shelf life for at least one year.
