Here’s another quick and easy recipe, this time a light soup made with the winter-hardy kohlrabi. Half an hour and you can already warm up with the soup.
The kohlrabi cream soup has one ingredient that you don’t really expect, and that is the apple. We won’t throw ourselves into expenses because of this soup either. Kohlrabi offers many advantages: it protects the heart and veins, contains a lot of fiber and vitamin C, as well as potassium, phosphorus and magnesium. Its sodium content is low. For people who often have flatulence, however, kohlrabi should be avoided, at least large portions of it. The soup, however, should be less difficult to digest. Here are the ingredients: 500 g kohlrabi 1 onion 1 piece of potato 1 apple (Granny Smith) 0.5 liter soup base, eg: meat broth or vegetable soup 1 tbsp olive oil salt ½ tsp curry powder 50 ml cooking cream Preparation: Sauté the onion in olive oil. Add the peeled and diced kohlrabi, the potatoes and the apples, pour in the broth and cover the vegetables and let them cook. Sprinkle in the salt and curry powder, if you wish to add other spices add them to taste. When the vegetables are soft, use an immersion blender to puree the soup until runny. Add the cream and bring the soup to a boil. Garnish with parsley or croutons, if you like.
