The bread machine, a strange device? Yet this object turns out to be an extraordinary invention for all lovers of hot and fresh bread! Put your ingredients in the bread maker, and plug in for a tasty result, effortlessly smelling the whole house with a sweet smell of bread. The bread maker – or MAP for the initiated – is a household appliance the size of a fryer, with several programs for making bread in the simplest way in the world. All you have to do is open the hood of the machine and slide in the ingredients needed to make the bread you have chosen, one by one. The machine is then used to knead, raise and bake the bread using an electric programmer.

How does a bread machine (or map) work?

Generally, on the front or the lid of the bread machine, you will find a dashboard composed of a menu, to choose your program, opt for the right size of bread, its baking and the color of the crust.
Indeed, the average weight of a loaf is often between 400 and 750 g depending on the doses and the type of flour used.

Inside the bread machine is placed a large container with non-adhesive walls, equipped with a paddle kneading.
Before placing all of your ingredients in the container, make sure the paddle is secure and clean. The container remains attached to the base of the machine throughout cooking.

When the bread is cooked, remove the container to take out the bread by unlocking it in the direction indicated. To do this, take a cloth because it is hot.

Which flour to use in a bread machine (map)?

There are different types of flour to make your bread. The most common and one of the finest is flour T55. The T65 is also suitable.
The lower the number, the more refined the flour; when this indicator rises, your flour will be rather full.

If you want to make a gluten-free bread, we advise you to mix the flours. Indeed, some are deemed "non-baking", that is to say that the absence of gluten does not promote swelling and their density weighs down the bread.
So, to use chestnut flour, buckwheat or even a small dose of grape seed flour (if it exists and it's packed with good nutrients), mix with rice flour, millet flour , quinoa flour, amaranth, lupine, or chickpea, and also small spelled (which contains excellent quality gluten, since it comes from a little processed wheat).

So do not hesitate to combine the flours together to give a original taste to your bread. However, these flours require special attention in relation to the cooking time of flours specially designed for bread machines. You may be forced to test several versions before finding THE recipe that will make a superb bun (yeast change, mixing out of tank before launching the machine …).

Which yeast should I use in my bread machine?

If you are not allergic to it, the Baker's yeast (not to be confused with leaven or baking powder) can be sold in two forms: fresh or dehydrated. 20 g of fresh yeast equivalent to 1 sachet of dehydrated yeast. The fresh yeast must be diluted in a warm liquid before incorporation into the tank. You can buy it directly from your baker.

For salt your bread, the quantities must be dosed with precision (otherwise, you risk obtaining a bland bread). Attention, never leave salt and yeast in contact, because the salt has the effect of canceling the action of the yeast by slowing down the fermentation process. Therefore, 1 teaspoon is enough for 400 g of flour.

What does my bread look like?

Exit traditional bread, curved and notched on top, ovoid in shape! In a bread machine, as good as it is, your bread comes out in a square shape (the shape of your baking vat in the MAP!), A little like white bread.

But you will be able to dare original associations for your breads throughout the year. Add sunflower seeds, flaxseed, poppy seeds, squash seeds … hazelnuts, almonds, walnuts …
Dried fruits can also be used to make your bread.
