Flammkuchen from Mecklenburg’s dough whisperer

at the September 17, 2023 around 4:30 p.m Clock

At Grit Steußloff, in a historic bakery in the Rostock district, golden brown Mecklenburg souls come out of the oven from their special sourdough with black cumin, coarse salt and spelled flour. The home-loving Mecklenburger is also trying out a new tarte flambée dough for “Brot & Stulle”, which she first has her wife and her 92-year-old father-in-law test before passing it on to her inquisitive course participants: a new special recipe from Grit. During a trip to Kühlungsborn Beach, she bites into her favorite snack: a slice of black bread and eel with crunchy farmer’s cucumbers and lettuce. Of course it tastes twice as good with a sea view.

From qualified teacher to dough whisperer: 51-year-old Grit Steußloff ventured into the baking trade about two years ago and convinced the Rostock Chamber of Crafts of her skills. Baking is her latest passion, because Grit actually didn’t want to go into the bakery, she just wanted to find out how sourdough works. Then she started making good bread from it. As an adult education teacher, it made sense that Grit would also want to share her knowledge. Since then, she has been giving courses for those interested in baking at different locations in the beautiful Rostock district.

The dream of having your own show bakery drives Grit. She is looking for a place where she can bake her bread, have space for classes and open a café. She has an exciting location in Kröpelin in mind.

The documentary series “Brot & Stulle” takes you on a culinary journey into the world of baking around the cultural heritage of bread. Each episode portrays bread makers from Northern Germany who have one thing in common: They prove in their bakeries that bread is not fast assembly line work or has to contain artificial additives, but can be made naturally with a lot of time and passion. They create crispy masterpieces in their bakeries, reveal their favorite recipes and create a meal based on bread that you can imitate.
