  1. Preheat the oven to 180°C top/bottom heat (160 degrees fan, gas level 2). Line the bottom of a springform pan (26 cm diameter) with baking paper and grease the edge or grease it completely and sprinkle with breadcrumbs.

  2. Peel, wash and roughly grate the carrots. Mix the flour, baking powder and hazelnuts well. Separate eggs. Beat egg whites and salt until stiff.

  3. Mix the egg yolks, oil, sugar and cinnamon in a mixing bowl with the whisk of the hand mixer. First stir in the flour mixture in portions, then add the grated carrots and stir in as well. Finally, carefully fold the egg whites into the dough using a spatula.

  4. Pour the dough into the springform pan and bake the carrot cake for 40-50 minutes. Remove the cake, remove the edge of the pan and let it cool on the cake rack. To serve, dust generously with powdered sugar and decorate with marzipan carrots and possibly a sugar bunny.

Tip

It saves washing up if you beat the egg whites first and then mix the egg yolks and the other ingredients. For what reason? In order for the egg whites to become stiff, the whisks and the mixing bowl must be free of grease. However, you can still use the whisk to mix the dough.

Variation ideas for the carrot cake

  • Instead of cinnamon You can also add ground anise, gingerbread spice or pumpkin pie spice mix to the batter.

  • Quite impatient or hurried bakers You can avoid separating the eggs, beating the egg whites into egg whites and folding them into the dough. The cake tastes just as good, but is not quite as fluffy.
