  1. Preheat the oven to 180 degrees top/bottom heat (fan oven 160 degrees, gas level 3). Grease a springform pan (26 cm diameter) and dust it with flour.

  2. Peel and finely grate the carrots. Mix flour, baking powder, almonds and cinnamon.

  3. Mix the eggs, sugar, vanilla sugar and salt with the whisk of the hand mixer for about 5 minutes until creamy. Add the flour mixture, grated carrots and oil and stir in.

  4. Pour the dough into the prepared springform pan and bake in the preheated oven for about 50 minutes. Do a stick test 15 minutes before the end of the baking time and possibly bake the cake longer.

  5. Let the carrot cake cool and dust with powdered sugar.

Which nuts are suitable for carrot cake?

Carrot cake tastes good with ground ones hazelnuts, almonds and walnuts. Also Coconut flakes are suitable.

How can I serve the carrot cake?
