For the shortcrust pastry
Mix flour, baking powder, sugar and salt in a bowl. Add butter in pieces and 1 egg. First knead everything with the dough hook of the hand mixer, then briefly with your hands to form a smooth dough.
Roll out the shortcrust pastry into a round shape (approx. 30 cm diameter) on a lightly floured work surface or press it into a smooth base in the greased springform pan with your hands, pulling up the edge. Prick the shortcrust pastry base several times with a fork. Chill the springform pan.
Preheat the oven to 180 degrees top/bottom heat.
For the curd mass
Melt the butter and let it cool slightly. Separate 2 eggs. Beat 2 egg whites and 1 pinch of salt until stiff. Mix the quark, 2 egg yolks, 2 eggs, sugar, vanilla sugar, pudding powder and melted butter until smooth. Fold in egg whites.
Spread the quark mixture in the springform pan and smooth it out. Bake the cheesecake in the preheated oven for 50-60 minutes. If necessary, cover with baking paper 15 minutes before the end of the baking time so that the surface does not get too dark. Let cool down. Before serving, sprinkle with powdered sugar.
Tip
Instead of pudding powder, you can also stir 80 grams of cornstarch into the curd mixture.
This prevents the cheesecake from collapsing
To prevent the creamy cheesecake from collapsing in the middle after baking, you should first let it cool for about an hour in the switched off oven with the door slightly open. This allows the moisture to escape. To prevent the oven door from accidentally closing, simply place a pot holder or a wooden spoon between the oven door. Then you can remove the cheesecake and let it cool completely in the baking pan.
