You don’t necessarily have to heat up the oven to make delicious Christmas cookies. These recipes ensure sweet enjoyment – without baking.

The smell of cinnamon, vanilla and dough comes from the kitchen: for many, baking cookies is part of the pre-Christmas period and brings back memories of childhood. However, rising energy prices should also worry those with a sweet tooth and passionate bakers: After all, the oven is one of the biggest energy guzzlers in the home. If you still don’t want to do without the Christmas treats, you will find inspiration here for cookie recipes that don’t need to be baked and that are also suitable for baking beginners.

Christmas speculoos truffles

Ingredients for approx. 30 pieces: 100 ml cream or vegetable alternative, 300 g whole milk or dark chocolate coating, 50 g speculoos biscuits, 2 tbsp cocoa powder, 1 tbsp sugar, 1 tsp cinnamon, 1 pinch of salt

Preparation: Slowly heat the cream in a saucepan, but do not let it boil. Break the couverture into pieces and let it melt in the cream, stirring constantly. Meanwhile, crush the speculoos biscuits and then add them to the melted chocolate with a pinch of salt. Mix vigorously and chill in the refrigerator for at least two hours until a firm mass has formed. Mix cocoa powder, sugar and cinnamon and set aside in a shallow bowl. Roll the chocolate-speculaas mixture into small balls and toss in the cocoa mixture.

oatmeal

Ingredients for approx. 30 pieces: 150 g chocolate or couverture, 150 g rolled oats, 80 g peanut butter, 2 tablespoons milk or plant-based drink

Preparation: Melt the chocolate in a water bath, place in a bowl and knead into a dough-like mass with the oatmeal, peanut butter and milk. Shape into cookies, place on a board lined with parchment paper and leave to cool in the fridge.

Chocolatey almond slivers

Ingredients for approx. 30 pieces: 200 g almond sticks, 100 g whole milk or dark couverture

Preparation: Melt the couverture in a water bath. Roast the almond sticks in a coated pan without fat and add them to the liquid couverture until all the sticks are coated in chocolate. Then immediately place small heaps with two teaspoons on a baking tray or board lined with baking paper and leave to cool.

Apple Nut Cookies

Ingredients for approx. 30 pieces: 40 g hazelnuts, 40 g rolled oats, 120 g raisins or dates, 40 g grated apples, 2 teaspoons lemon juice, 20 g coconut oil

Preparation: Place all ingredients in a blender or food processor and chop. As soon as a homogeneous mass has formed, put it in the fridge and chill for at least an hour. You should then be able to form a roll out of the dough. If it’s still a little too sticky, you can add some oatmeal. Cut the roll into even slices about 0.5 centimeters wide and press flat – the biscuits are ready!
