Can you reheat spinach?

When spinach is warmed up, the nitrate it contains converts to nitrite. This in large quantities can be harmful to health and, for example, cause vomiting or nausea. However, if spinach is not stored at room temperature, but refrigerated, there is no danger for adults because the amounts of nitrite are too low. Young children, on the other hand, should not eat warmed up spinach. Generally, spinach should be kept in the refrigerator for a maximum of two days and then consumed.
