Cast off for the eighth season of LECKER AN BORD! This time, the popular WDR summer series is visiting the far north: top chefs Björn Freitag and Frank Buchholz go on a culinary journey of discovery on the Frisian Lake District in the Netherlands.

They set off on their houseboat from Lemmer on the Ijsselmeer and sail across lakes and canals to the center of the historic town of Sneek. The destination of their trip is the water sports village of Grou in the heart of Friesland. Close to the picturesque port towns, the chefs visit farms and factories and discover the region’s culinary specialties. Today: Blaarkop beef burgers meet kimchi art.

The first anchor point of their journey through Friesland is the inland port of Lemmer. A home game for the new skipper Kai Linnenbrügger: 12 years ago, the Bielefeld native moved to Friesland with his family. He runs a sailing school in Lemmer and is looking forward to showing the chefs his adopted home this summer.

From Lemmer, Björn sets off to visit Hermien Langelaan, who runs a cheese dairy in Blesdijke. In addition to sheep, she keeps a regional breed of cattle with a special coat pattern on her organic farm. The frugal animals provide both milk and meat and live outside on the pasture with the Langelaans all year round.

Frank’s destination is the village of Harich, the new home of Andjelka Cajic de Rooij. Thirty years ago, she fled the war in Bosnia to the Netherlands. After a career in IT, she followed her heart and opened a small backyard bakery in Friesland. Andjelka’s great passion is working with sourdough, but you can also find French and Scandinavian delicacies at her place – all of the highest quality.

His second visit takes Björn to Ruben Abma, who has fulfilled his dream of a diverse berry farm in Oldeholtpade. Ruben planted every bush in the picking garden with his own hands. Today he cultivates over 20 different types of berries.

Back on board, the chef friends create sophisticated, down-to-earth summer dishes from their “catch of the day”. For dinner on deck, they invite not only their skipper Kai, but also the producers they visited on their forays.

The starter is crispy tarte flambée with kimchi, Gouda and Asian mayonnaise. The main course is a hearty beef burger with cucumber pickles, BBQ and Gouda sauce. To finish, the pair serve a dessert of marinated berries with egg liqueur and gratinated quark mixture.

Culinary delights around Cochem

The penultimate destination of the summer trip is the small district town of Cochem. Skipper Mia docks her houseboat opposite the historic Reichsburg castle.

From here, Frank sets off to see Hannah Braun from the “Ovis Mosella” sheep farm. In the summer months, the traveling shepherdess travels along the Moselle with 350 Coburger Fuchs sheep in many stages. By grazing, the sheep prevent areas from becoming overgrown and thus maintain a cultural landscape full of biodiversity. Together with Hannah, Frank separates male lambs from the herd, feeds a bottle lamb and experiences how much the shepherdess relies on her sheepdogs, who form a “living fence” around the herd along the way. Frank is rewarded with a saddle of lamb and several lamb sausages.

Meanwhile, Björn is on his way to Münstermaifeld. In a forest near Eltz Castle, he meets Johannes and Zaneta Frankenfeld, who have rediscovered the local forest as a source of food for humans. The couple are particularly fond of beechnuts, the fruit of the red beech, from which they produce valuable beechnut oil. Björn learns the technique used to collect the small nuts and tries raw and roasted varieties on Johannes and Zaneta’s farm. In addition to beechnut oil, the top chef takes some beechnuts, a forest salt mixture, fennel blossoms and fresh chard from the home garden on board.

Back on the houseboat, the food is simple and delicious: for starters, there is grilled watermelon with goat’s cheese, accompanied by lamb sausages with beechnut and spice ketchup. For the main course, Frank and Björn serve saddle of lamb with a beechnut and herb crust with chard and grilled tomatoes.
