Peel the banana and cut it into small pieces. Halve dragon fruit. Remove half of the pink pulp and puree it with the banana pieces, quark and sugar using a hand blender. Cut small balls out of the remaining dragon fruit halves. Peel and slice the kiwi.

Rinse the pears, pat dry, peel and grate finely with a square grater (around the core). Mix the eggs, milk, flour, salt and pear rasp in a tall container using a hand blender to form a smooth dough. Melt some butter in a non-stick pan (24 cm Ø) over medium heat. Pour a ladleful of batter into the pan and swirl to distribute the batter evenly. Bake over medium heat for 1-2 minutes. As soon as the dough starts to bubble, turn it over and bake for another 1-2 minutes. Bake 3 more pancakes from the remaining dough and butter.

Fill the pancakes with the pink quark cream. Serve with kiwi slices, dragon fruit balls and honeycress. Serve dusted with powdered sugar.
