Drying tomatoes: There are 3 variants

Drying tomatoes is not difficult at all, it only requires a little patience. We show three different variants with which you can dry tomatoes yourself.

Drying tomatoes: the ingredients

  • 1 kg tomatoes (preferably bottle tomatoes)
  • 1 sprig of rosemary
  • 1 sprig of thyme
  • Salt (coarse)
  • 1 clove of garlic
  • approx. 150 ml olive oil

Drying tomatoes in the oven: how it works

  1. For drying tomatoes, you should only use ripe fruit that has no green, rotten, or even moldy spots. Wash the tomatoes thoroughly and halve or quarter them (depending on the size).
  2. In the next step you can remove the stalk and the seeds and place the tomatoes skin down on a baking sheet lined with baking paper.
  3. Chop the rosemary and thyme and sprinkle the herbs over the tomatoes. Then you can salt them and drizzle with oil.
  4. At 100 ° C you can now dry the tomatoes for about 6 hours. The oven door should always be slightly open, for example using a cooking spoon. In between, the fruits have to be turned.
  5. The dried tomatoes are ready when no more water comes out when pressed on, but they are still flexible.
  6. After cooling, the dried tomatoes can be poured into screw-top jars. Chop the clove of garlic, add it to the jar and fill it with olive oil until the dry tomatoes are completely covered. Finally, you should close the lid airtight.

Tomatoes dry in the dehydrator

If you own a dehydrator, you can dry tomatoes with a little less effort. To do this, cut the tomatoes into small pieces, brush the grid with a little oil and place the tomatoes on them. Now you can dry them up in the machine. This process takes different times depending on the device, the average is eight hours. The advantage: the tomatoes do not have to be turned over.

Dry tomatoes in the sun

This variant for drying tomatoes takes the longest by far, but is the most environmentally friendly. If the sun shines intensely for several days, you can do that Air-dry tomatoes. To do this, place the quartered tomatoes with the cut side down on a grid that is slightly spaced from the ground. In this way, air can reach the fruit from all sides. Now you can place the tomatoes in the blazing sun, they should after about three days be dried. It is best to cover them with a net so that they cannot be eaten by birds or other animals. In between, you should also turn the tomatoes.

Which types of tomatoes are suitable for drying?

Ideally, you should use bottled tomatoes because they have a thin skin and firm flesh. For example, the tomato varieties "San Marzano" and "Pozzano" are very suitable.
