Edible clouds: fast soufflé cheesecake with only 3 ingredients

This soufflé cheesecake from Japan is an internet hit. It has been clicked on YouTube more than 7 million times. We tested the unusual cheesecake with only 3 ingredients on a children's birthday party for you. With its airy consistency, which is more reminiscent of edible clouds or cotton candy than traditional cheesecake, it was of course a hit with the children. And the adults are happy too, because the 3-ingredient cheesecake is quick to make and doesn't require much preparation.

The recipe for the Japanese cheesecake

Ingredients:

  • 3 eggs
  • 120 g white chocolate
  • 120 g cream cheese

Preparation:

  1. Separate the eggs and beat the egg whites until stiff.
  2. Melt the white chocolate in a water bath and then creamy with the cream cheese. Stir in the yolks and then fold the egg whites into the mixture.
  3. Grease the springform pan and pour the dough into it. Place the dish on a deep baking sheet filled with water and bake in the preheated oven at 170 ° C for about 15 minutes.
  4. Then turn the temperature to around 160 ° C and bake again for 15 minutes.
  5. Now you can switch off the oven and let the cake cool for another 15 minutes. Take out the Japanese cheesecake and let it cool completely on a wire rack. If you like, you can now sprinkle it with powdered sugar.

Decoration tip for children's birthday:

Ingredients:

  • 8 canned peaches
  • dark chocolate (melted)
  • Almond leaves

Preparation:

A great decoration variant that sparked enthusiasm at the children's birthday party: simply dry the peach halves, lay them on a board with the cut side down and spread narrow strips on the fruit with the melted chocolate so that the peaches look like little bees. Then insert the almond leaves as wings. Puree the remaining peaches and cover the cake with them. Now the bees can be distributed on the soufflé cake from Japan – voilà!

By the way: In the end, we adults knew exactly why a real cheesecake needs more than just three ingredients. This cotton candy cake doesn't come close to a classic, creamy cheesecake!
