Equivalences in the kitchen

A glass of flour, a spoonful of sugar, a knob of butter… This is often what you can read in cooking recipes. Especially when the origin of the recipes is Anglo-Saxon. But what does that mean in grams or liters? To be sure you are not mistaken, here is what these quantities correspond to. Look no further, all the cooking equivalents are here!

Kitchen equivalence to measure in teaspoons

One teaspoon is equivalent to 5 ml of liquid.

A level teaspoon is equivalent to 5 g of sugar and 4 g of flour.
One heaped teaspoon is equivalent to 10 g of sugar and 8 g of flour.

Equivalences in glasses or cups

Our selection of practical utensils

A medium glass or breakfast cup contains 15 centiliters (cl) of liquid or 150 cm3.

One glass contains 100 g of flour, 200 g of cream, 125 g of rice, 140 g of caster sugar.
An aperitif glass contains 3 cl, 30 cm3 or 1.5 tbsp. soup.
A coffee cup (or a small wine glass) is 1 dl, 100 cm3 or 6 tablespoons.
A medium bowl is 2.5 dl or 250 cc.
A large bowl is worth 5 dl, 500 cm3, which corresponds to 300 g of flour, 400 g of semolina, 470 g of rice, 450 g of lentils or dried beans.

Volume / weight equivalents, i.e. centiliters / grams

For a liquid like water, the density is 1l = 1kg, i.e.:
– 1ml (i.e. 0.1cl) = 1g
– 1cl = 10g
– 1dl (i.e. 10cl) = 100g
– 1l (i.e. 100cl) = 1000g

Warning however, depending on whether it is a liquid or a solid ingredient, the centiliter / gram equivalences are slightly different.

Examples of volumes by weight
> 5cl of jam will give you approximately 68g of product when 5cl of rum corresponds to 47g.
> 20 cl of liquid crème fraîche equivalent to 206 grams while, for the same volume, this corresponds to 110 g of flour and 184 g of sunflower oil.
> 50cl of milk is 516 grams, but 50cl of powdered sugar is only 445g, while 50cl of dried fruit weighs 320g.
> 100 cl of water (or 1 liter) equals 1 kg, but the same volume corresponds to 550 g of flour or 500 g of grated cheese. For 1kg of flour, this will make 182 cl (or 1.82 l) of ingredient.

Examples of weights in volumes
> For 10 g of honey, this will make a volume of 0.7 cl, while 10 g of caster sugar is equivalent to 1 cl.
> 50 g of flour corresponds to 9 cl but, for the same weight of mustard, you will only have 5cl.
> 100g of basmati rice will make 12cl, while 100g of fresh orange juice will only be 9.5cl.
> For 250 g of liquid cream, you will have 24 cl of product while, for the same weight of butter, this will give you 29 cl.

Kitchen equivalents for measuring liquids

1 L (liter) is equivalent to 6 + 2/3 mustard glasses.

> 3/4 of L is equivalent to 5 mustard glasses.
> 1/2 L is equivalent to 3 glasses and 1/3 mustard glass.
> 1/8 of L is equivalent to 3/4 of a mustard glass.
> 1/10 L is equivalent to 2/3 of a mustard glass.
> 1/20 of L (or 5 cl) is equivalent to 1/3 of a mustard glass.

Nuts and pinches

BUTTER
1 knob of butter = 5 grams of butter
1 knob of butter = 15 grams of butter

SALT
1 pinch of salt = 3 to 5 grams of salt

How much does an egg weigh?

1 egg weighs on average 55 g, including 20 g of white, 30 g of yolk, 5 g of shell.

Equivalences of thermostats in degrees

BARELY WARM OVEN

  • Thermostat 1 corresponds to 30 ° C
  • Thermostat 2 corresponds to 60 ° C
  • Thermostat 3 corresponds to 90 ° C

SOFT OVEN

  • Thermostat 4 corresponds to 120 ° C


MEDIUM OVEN

  • Thermostat 5 corresponds to 150 ° C
  • Thermostat 6 corresponds to 180 ° C
