Zero Waste, Local Food and Real Omnivore are some of the buzzwords in the food trends of 2022. GALA reveals what we can expect from the trends.

We want to do good! Good for our bodies, good for the environment and good for wildlife. They show that too Food trends 2022. 1. Miso

Known in this country above all from a visit to a Japanese restaurant as a seasoning base in miso soup, the brown seasoning paste is on its way to our spice shelves in 2022. With a base of soybeans and rice, miso is made using multiple fermentation processes. These processes also make the paste so healthy. Because the probiotics produced during fermentation are not only good for your intestines, they are also said to help with gastrointestinal problems and high blood pressure. Miso can be used in hearty dishes such as soups and snacks as well as in biscuits and pudding.

2. (Non-Alcoholic) Pre-Mixed Drinks

This year more and more manufacturers are offering their cocktails and long drinks packaged in cans or in innovative ready-to-go packaging. What was once decried as a cheap canned drink is hip again today. The trend towards non-alcoholic spirits is also taken into account and some companies also offer no-alcohol cocktails to go. The perfect accessory for a picnic in the park or the next open-air concert.

3. Nut spread

Something that should never be missing in vegan cuisine is now also finding its way onto the shelves of chocolate spread fans. Nut butter pimped with cocoa, dates, coconut or cinnamon is on the rise. Most of the sweet spreads do not contain any refined sugar and are popular both as a spread and as a topping for porridge and breakfast bowls.

4. Bimi

The broccoli-like vegetable is characterized by its long stems and is reminiscent of a cross between asparagus and broccoli, which is why it is colloquially called asparagus broccoli or broccolini in English. Bimi has a mild flavor and is actually a cross between broccoli and kai-lan, a Chinese leafy vegetable – similar to Swiss chard. Bimi is a real superfood because, in addition to many minerals, trace elements and vitamins, it is also low in calories. However, Bimi is not grown in Germany and speaks against the food trend towards regionality. A home substitute is young broccoli.

Food trends 2022: We are paying attention to this this year

1. Local Exotics

The first food trend in 2022 is called “Local Exotics”. More and more people are doing without exotic foods such as avocados, mangoes or pineapples. Therefore, according to experts, there will be more attempts in 2022 to produce so-called local exotics. With the help of innovative and future-oriented farmers and researchers, possibilities for the local cultivation of exotic foods are being developed. In this way, the desire for regionality and culinary specialties could be met.

2. Zero Waste

Nothing new, but all the more popular, is packaging-free shopping. Many companies have already reacted and reduced their packaging waste. Because what first ends up in our shopping bags usually ends up in huge mountains of rubbish that cause lasting damage to people and the environment. The zero-waste vision wants to counteract this.

There is therefore a clear trend towards weekly market purchases, shopping in bulk shops and the use of apps to avoid waste production within the food cosmos.

Another offshoot of the zero-waste movement are all kinds of sharing offers. More and more bakeries, cafés and restaurants are also taking advantage of the principle of zero-waste for groceries and are offering leftover goods at a reduced price at the end of the day.

3. Real Omnivores

The term Real Omnivores, i.e. “true omnivores”, has been seen more and more frequently in the last year. It stands for people who not only consider their own health when consuming, but also that of our planet. Real Omnivores are open to new technologies in food production and new cultivation and husbandry methods in agriculture.For example, meat from the test tube, vanilla from plastic and chips from jellyfish could be on the menu.
