Step 1: choose the right strawberries
Fresh strawberries only stay in the fridge for a few days, so the fruits should be frozen at the latest two days after picking. Berries that already have pressure points should not be used for freezing.
You also need to be aware that the strawberries are definitely mushy after thawing and are therefore not particularly suitable as a cake topping. Instead, you can use them to make strawberry jam or strawberry ice cream, for example.
Step 2: wash strawberries
Before you can freeze the strawberries, you should clean them thoroughly under running water. But make sure that the beam is not too hardso that they are not damaged. Then you remove the stalk and drain the berries. You can also dab them with a cloth.
Step 3: sugar strawberries (optional)
You don't necessarily have to sugar the strawberries in advance, however this extends their shelf life. To do this, dissolve 500 grams of sugar in a liter of boiling water and pour the syrup over the fruit. Then let them cool completely.
Step 4: snap freeze strawberries
This step is also not absolutely necessary to freeze strawberries. But if you want to prevent that the frozen berries freeze together later, you should freeze them. To do this, place them side by side on a baking sheet or a large plate and stow them in the freezer for about an hour. The fruits can later be individually portioned.
Step 5: freeze strawberries
Finally, put the strawberries in freezer bags or other containers, label them and put them in the freezer. There they are shelf life for about eight months, sugared strawberries even up to a year.
Tip: freeze the strawberry puree
Since the strawberries are mushy after thawing, you can use them immediately freeze as a puree. To do this, you need to puree them after washing and sweeten them with a little powdered sugar. Then you can fill them in ice cube trays and freeze them. So you can portion the strawberry ice cubes individually and spice up lemonades or sparkling wine.
