You can freeze tofu to keep it longer – but there are a few things to keep in mind. We explain how to do it best.

When should you freeze tofu?

Tofu will keep for several weeks in vacuum packaging, but if you still exceed the best-before date, it makes sense to freeze the tofu to avoid food waste. If the package has already been opened, tofu can only be stored in the refrigerator for a few days, so it is better to keep it in the freezer: Frozen tofu will keep for about six months.

Tip: Opened tofu can be covered with water and stored in the refrigerator, so it stays fresh for three to four days.

Freezing tofu: effect on consistency

Freezing causes the pores of the tofu to enlarge because the soy product consists mainly of water that leaks out when thawed. This affects the consistency: depending on the variety, the tofu will be crumbly or firmer.

  • The consistency of classic Natural tofu becomes firm due to freezing, so that it becomes nice and crispy when frying in the pan. In addition, if you want to marinate the tofu, the pores are larger, so the marinade is particularly well absorbed. However, you should use the spices a little more sparingly so that the taste does not become too intense.
  • Silken tofu becomes more crumbly after thawing. This is very useful if you want to use it as a soy mince, for example for a tofu bolognese.

By the way: White tofu sometimes turns yellow when frozen, but this is just a visual change, the does not affect the taste. The discoloration often disappears after thawing.

  1. The tofu can either be frozen in the unopened vacuum packaging or in an airtight container. This prevents the product from drying out or freezer burn.
  2. Depending on what you want to use the tofu for later, you can cut it into pieces and portion it in advance.
  3. Mark the container with the current date and seal it airtight, then you can freeze the tofu. It should stay in the freezer for at least half a day so that it freezes completely.
  4. The best way to gently thaw the tofu is to store it in the refrigerator overnight.
  5. Finally, you should squeeze out the tofu to remove the liquid. Then it can be marinated and further processed as desired.
