If the older child is moaning about math problems and the smaller one is croaking after the tablet, I could easily use a gin and tonic. But of course I don’t drink my first long drink in the morning or afternoon. A small but nice cookie with a gin and tonic flavor could still contribute a lot to my satisfaction. And here we already have the right recipe:

This is what you need for the gin and tonic cookies

That’s how it works:

  1. Preheat the oven (electric stove: 180 °C/fan oven: 160 °C/gas: see manufacturer) and line two baking trays with baking paper.
  2. Wash the organic lime with hot water, dry it and grate the peel finely and mix the zest with flour, 200 g sugar and 1 pinch of salt. Add egg yolk, butter in pieces and 5 tbsp gin.
  3. Now knead with the dough hook of the mixer and then with your hands to form a smooth dough.
  4. Halve the dough and form into 2 rolls (approx. 5 cm Ø each). Wrap it in cling film and put it in the fridge for about 30 minutes
  5. Time for a delicious gin and tonic and chatting with the ladies.
  6. Simmer tonic with 100 g sugar for about 3 minutes. Peel all the limes so that the white skin is almost removed, cut into very fine slices and let them steep in the tonic syrup.
  7. Now cut 1 cm thick slices from each roll and distribute them on the trays.
  8. Dab the syrupy limes, place them on the dough circles, press lightly and bake in the hot oven for 15-20 minutes until golden brown. Remove and let cool.
  9. For the icing, mix together the powdered sugar and 1-2 tablespoons of gin. Drizzle over the cookies and let dry.

This is a great way to spend a relaxing morning, afternoon or evening. And at the end you not only have a buzz, but also incredibly delicious cookies, free of sugar sprinkles.
