Gin Tonic Cookies – Baking cookies for the big girls

Unfortunately, we can’t drink gin and tonic every day, even if we feel like it right now when we get up. Cookies, on the other hand, are also good in the morning, secretly.

When the big kid is moaning about the maths and the little one is quacking after the tablet, I could do with a gin and tonic. But of course I don’t just sip my first long drink in the morning in the afternoon. A small but fine little biscuit with gin and tonic taste could still contribute a lot to my satisfaction. And here we have the right recipe:

You will need this for the gin and tonic biscuits

  • 3 organic limes
  • 400 grams of flour
  • 300 grams of sugar
  • Salt
  • 2 egg yolks (size M)
  • 250g cold butter
  • 6-7 tablespoons gin
  • 200 ml tonic
  • 125g powdered sugar
  • cling film
  • baking paper

That’s how it works:

  1. Preheat the oven (electric stove: 180 °C/convection oven: 160 °C/gas: see manufacturer) and line two baking trays with baking paper.
  2. Wash the organic lime in hot water, dry it and finely grate the zest and mix the zest with flour, 200 g sugar and a pinch of salt. Add egg yolk, pieces of butter and 5 tbsp gin.
  3. Now knead with the dough hook of the mixer and then with your hands to form a smooth dough.
  4. Halve the dough and shape into 2 rolls (each approx. 5 cm in diameter). Wrap in cling film and put in the fridge for about 30 minutes
  5. Time for a delicious gin and tonic and chatting with the ladies.
  6. Simmer the tonic with 100 g sugar for about 3 minutes. Peel all the limes so that the white skin is almost removed, cut into very fine slices and let them steep in the tonic syrup.
  7. Now cut 1 cm thick slices from each roll and place on the trays.
  8. Dab the syrup limes, place on the circles of dough, press down lightly and bake in the hot oven for 15-20 minutes until golden brown. Take out and let cool down.
  9. For the glaze, mix together the icing sugar and 1-2 tablespoons of gin. Drizzle over the cookies and let dry.

This is a great way to spend a relaxing morning, afternoon or evening. And in the end you don’t just get tipsy, you also have incredibly delicious cookies, free from masses of sugar sprinkles.
