We already knew that asparagus is incredibly versatile and can be prepared in a variety of ways. And that it tastes particularly good with a fine roasted aroma, too. We can not only create this wonderful aroma in the pan, but also by grilling asparagus. Grilled asparagus is one of the best things spring has to offer.
It's best to use green asparagus for grilling. Because it is often thinner than white asparagus, it is cooked faster. It's also easier to care for: you have to just wash thoroughly, peel roughly at the bottom and remove woody spots.
Tip: Must use fresh asparagus. It is particularly aromatic and has the least woody spots. And then you can start right away. If you can't use the sticks directly, read how to store asparagus here.
Grilling asparagus – step by step
- Place coarsely peeled green asparagus in groups of 5 or 6 sticks next to each other and then the groups Row along on a grill skewerso that they cannot slip through the grate. They are also easier to turn. (Warning: do not marinate!)
- The rust about 10 cm above the embers hang in and arrange the asparagus packages directly on the grid.
- Green asparagus grill for about 10 to 12 minutes (With white asparagus, the cooking time is extended to about 30 minutes). Make sure that the asparagus spears are not exposed to extreme heat, otherwise they burn quickly. If necessary, hang up the grate one floor higher or place the asparagus on the edge of the grill. Incidentally, it is even faster if you pre-cook the asparagus before grilling. This is especially true for white asparagus.
- Take the asparagus off the grill and Season with salt and pepper. It will be especially delicious if you serve herbal butter with it. We'll show you how to make herb butter yourself.
Marinate asparagus before grilling
If you want to marinate the asparagus with oil and spices before grilling, it is best to use heat-resistant oil (e.g. rapeseed oil) and place the sticks on a barbecue mat before grilling. Butter and fresh garden herbs are also good options. White asparagus should have about three hours to marinate before grilling. Browse through our best recipes for grilled marinades.
If you want to grill marinated asparagus without using a mat, there is always a risk that the herbs and spices will burn you and the oil will drip into the embers. However, we recommend do without aluminum for documents, even if small packages made of aluminum foil and grill trays are popular with many grill fans.
Aluminum foil and grill trays made of aluminum damage the environment on the one hand, and on the other hand salts or acid can detach from the material and get into your food. Instead use for example thin slabs of soapstone or slate.
