Monday October 16 in Here it all begins…

Lisandro found a replacement

Lisandro tells Teyssier that he has found a replacement: it is Stanislas Du Chesnay. The director of the Institute, who obviously knows this prestigious name, is impressed. Lisandro confirms his arrival at the end of the day.

Teyssier, Myriel and Iñesta bring together most of the students at Double A. Lisandro officially announces to them that he will have to leave the Institute, not without some emotion. As for Teyssier, he asks the students to give a warm welcome to his replacement, Stanislas Du Chesnay.

This double news is having its little effect. Laetitia takes the opportunity to thank Lisandro for giving her a chance in the gym. The latter assures her that he will ask his successor to let her continue her training. As for Deva, she has difficulty realizing that her mentor is going to leave the Institute. Lisandro reveals to her the reason for her departure, while reassuring her about her future.

For their part, Leonard and David are already fighting to know who will be Stanislas’s favorite. To put all the chances on his side, David puts on a suit. As he admits to Ethan, it is especially Deva that he intends to impress by ingratiating himself with the new hall master.

At the same time, Rose is surprised that Lisandro managed to change Stanislas’s mind about the position. Lisandro then reveals to his colleague that it is a poker move. He is willing to take this risk because he has no other solution.

At the end of the day, everyone prepares to welcome Lisandro’s replacement. Against all expectations, it is not Stanislas, but his father Hippolyte Du Chesnay, who arrives and meets the teaching staff.

After which, Teyssier takes Lisandro aside to make him understand that he does not want a crumbling old man as his new teacher. Lisandro tries to highlight the qualities of the one who trained him when he was young, but the director won’t listen. He forbids Lisandro from leaving for Montreal until this matter is resolved…

Hortense’s methods divide

For her First Year lesson, Hortense asks the students to make an omelette. Some students are doubtful, notably Malik and Jim. Hortense explains, however, that they will be judged on the creativity they demonstrate through this seemingly simple dish. Penelope decides to play the game.

At the end of the class, Hortense notes that Pénélope lacks technique, but that she knows how to be creative. The complete opposite of Malik. Hortense explains to the students that they will have to learn to combine technique and creativity. To help them, she planned an exercise for them to do for her next class: practicing doing 50 bounces in a row with a ball and a ping-pong paddle, while doing something completely different with their second hand. Malik and Jim do not hesitate to make fun of her and her unconventional methods.

In the park, Pénélope trains as Hortense recommended and is surprised that Malik and Jim do not do the same. The latter criticizes the methods of chef Rochemont, which he also intends to denounce to Myriel.

Later, Antoine summons Hortense to make her understand that the First Years are a little lost in the face of her methods. He advises her to take them more by the hand so that they feel reassured.

Salomé wants to prove herself

In the Double A kitchen, Salomé is very stressed. This is her first day as a work-study manager and she intends to prove herself. Gaëtan, who came to bring her the knives she had forgotten at her roommate, reassures her of his skills. Salomé nevertheless doubts the change she made in the scallop jelly by replacing the champagne with prosecco. At the same time, Teyssier arrives to ensure that Salomé manages the restaurant. By tasting what she prepares, he immediately notices the change she has initiated and orders her to follow Anaïs’ recipes to the letter.

After the service, Claire comes to see Salomé in the kitchen to tell her that a culinary critic will come for lunch at Double A next Wednesday. Claire took the opportunity to tell him about Salomé’s project. Excited by this concept, he is ready to provide her with a list of ingredients so that the chef can prepare a tailor-made plate for him. However, Salomé doubts that Teyssier will accept. Claire suggests going directly to talk to him about it.

When she meets Teyssier in the park, Claire takes the opportunity to talk to him about Salomé’s project and defend it as best she can. But the director is firm: there is no question of Salomé innovating at Double A. He also suspects Claire of using this situation to harm him out of pure personal revenge.

Claire then finds Salomé and Gaëtan to tell the young girl the bad news. While Salomé is ready to give up, her boyfriend encourages her on the contrary to prove Teyssier that he is wrong. He suggests that she disobey the director by preparing a tailor-made plate for the culinary critic who will end up publishing an excellent paper on her and the Double A. Enough to provide good publicity for the Institute. Claire agrees with Gaëtan.
