To make a jam without cooking, the ingredients are not the same as for a classic jam. It will indeed require fruit (250 grams), but there is a magic ingredient: chia seeds.

Chia seeds are tiny beige or black seeds that look like sesame seeds. They come from two herbaceous plants native to Mexico, Salvia miltiorrhiza and Salvia columbariae. Low in calories and carbohydrates, high in fiber, omega-3 fatty acids, minerals and protein, they are easy to incorporate into daily recipes. Slightly moistened, the chia seeds produce the same effect as gelatin: ideal for jam!

How to make a jam without cooking?

Step 1: Select seasonal fruits and start by washing and cutting them into pieces. Then make a puree with your fruit. To do this, crush them coarsely with a fork or simply mix them. For quantities, take a mug filled with fruit (250 g).

Step 2: Add a tablespoon of chia seeds, as well as a teaspoon of water. Leave to set for 2 hours in the fridge and you will obtain an express jam, without cooking and delicious!

The idea of ​​this jam is to make the most of the sugar naturally present in fruit. If they are not sweet enough for your taste, you can add 40g of brown sugar, honey or maple syrup.

How to store jam properly?

Homemade jam can be kept for a long time, but it is best to eat it during the year to take advantage of all the subtlety of the fruit taste. There is therefore no need to make a large quantity. To keep it properly, it should be placed in sterilized jars, which you store away from light, heat and humidity, in a cupboard, for example.

For that :

  • Clean the jars thoroughly.
  • Scald them.
  • Pour the jam into the screw-top jars.
  • Once filled, close the jars tightly: they must remain airtight.
  • Then turn the jars upside down and store them with the lid down, which will prevent air from collecting on the surface.

When the jam is open, remember to keep it in the fridge and always use a clean spoon when using to avoid contamination and mold. You can consume it within 15 days.
