1 tablet of vegetable broth
1 bar of defatted chicken stock
1 small packet of crystal noodles (exotic ray), if not vermicelli
15 fresh button mushrooms
1 nice carrot
1 clove of grated garlic
1 small piece of grated ginger
1 bunch of fresh coriander
Chilli powder
Soya sauce

Easy Chinese Soup Preparation:
Step 1: Peel and slice the carrot and button mushrooms into very thin slices.
Step 2: In a saucepan, heat 1 tbsp. oil and brown the garlic and ginger in it. Pour 3 / 4l of hot water and add the broth tablets. Mix until completely dissolved.
Step 3: Add the carrot pieces, cook for 2 min.
Step 4: Add the noodles and cook according to the package instructions.
Step 5: Take off the heat, add the mushrooms (they will cook with the heat of the broth), the coriander leaves, a pinch of chili and a dash of soy sauce. Serve immediately in a large bowl.

Chinese shrimp soup

Chinese soup is also available in a marine version, replacing the meat with shrimp. More exotic, more modern, this Chinese soup is sure to bring warmth to your table! And all this, spending only 20 minutes in the kitchen …

Ingredients (4 People):

  • 450g shelled raw shrimps + their carcasses
  • 1 stock cube
  • 1 lemongrass stick, split in 2 and crushed
  • juice of 1/2 lime
  • 1 thinly sliced ​​carrot
  • 150g of Chinese noodles
  • 1 chilli pepper, cut into rings
  • 1 tbsp soy sauce
  • some coriander leaves

Preparation of Chinese shrimp soup:
1- Place the carcasses in a saucepan containing 1 l of water and add the stock cube and the lemongrass stick.
2- Let simmer for 10 minutes then pass it through Chinese (no pun intended: it is a very fine strainer!).
3- Return the broth to the pan and add the shrimp, carrot, and pasta.
4- Cook for 7 minutes then add the soy sauce and lime juice.

Chinese beef soup

If you have some time ahead (it's raining, your guests will be there in more than 2 hours, you're hesitating between playing candy crush or doing something more useful), Chinese beef soup is a good option. Ok, the recipe is a bit long (count almost 1h30) but roughly speaking, it is especially the pressure cooker that works.

Ingredients (4 People):
For the soup:
– 200 g of beef in thin strips + some bones
– 5 chopped onions
– 1 grated carrot
– 1 bouquet garni
– Chinese vermicelli
– dehydrated Chinese mushrooms
– salt pepper
For the sauce: nuoc-nam sauce, vinegar, crushed garlic, 1 pinch of sugar

Preparation of Chinese beef soup recipe:
1- In a pan, brown the beef with the onions, the bones of the meat and the carrot. Wet with a little water and add the bouquet garni, then cook for 1 hour in a pressure cooker.
2- In a bowl, put the mushrooms to soak in a little water to make them swell. do the same for the vermicelli in another bowl.
3- Once they are rehydrated, cut vermicelli and mushrooms before adding them to the soup. Then cook for 10 minutes over medium heat.
4- Prepare the sauce by mixing all the ingredients listed above.
5- Serve the soup hot with the sauce on the side.
