Impossible to miss out on Instagram: fluffy pancakes – also called Hottokēki in Japanese – are everywhere! Straight from the land of the rising sun, these XXL pancakes, light and extra soft, are about to dethrone the traditional American pancakes and it must be said that they make our mouth water just by looking at them! The secret of their plump and airy appearance? The whites mounted in snow.

To accompany these thick pancakes as light as a cloud in the mouth, the possibilities are numerous! If the Japanese like to taste them with a scoop of ice cream and fruit, you can also enjoy them with maple syrup, icing sugar or melted chocolate. And the icing on the cake: they are super easy to make! Perfect for Sunday brunch or the week's gourmet breakfast, fluffy pancakes will become your new food obsession of the moment.

The recipe for fluffy pancakes

Ingredients :

  • 150g flour
  • 2 eggs
  • 1 half sachet of baking powder
  • 70g sugar
  • 100ml milk
  • 2 teaspoon vanilla extract
  • 1 pinch of salt

The preparation :

  • Start by separating the whites from the egg yolks.
  • Pour the sugar over the yolks and mix to make them blanch.
  • Add the flour, vanilla and baking powder. Mix, then add the milk.
  • Whisk the egg whites while adding a pinch of salt.
  • Add them to the preparation.
  • Form circles in a pan and brown on both sides.
  • Serve with a drizzle of maple syrup or honey and a few raspberries or blueberries.
