The 31-year-old chef talks about her childhood in Burgundy with parents who were both employees of the Public Treasury, her grandmother’s jams and morel crust, her click for fencing, a discipline for which she will join the hope pole, his first experiences in the kitchen with William Ledeuil, Alexandre Couillon and Dan Barber and his discovery in the United States of the potential of cereals and then of plants.
Manon Fleury shares her desire to make the most of good products, her admiration for the naturalist cinema of Abdellatif Kechiche and Eric Rohmer, her taste for dishes that hide things that are more complex than they appear and his defense of a political vision of his work even in the way of exercising his profession: “It is possible to have a career while having private lives. That’s what I want to demonstrate by having women with me in the kitchen. »
For four seasons, producer Géraldine Sarratia has questioned the construction and intricacies of a personality’s taste.
