Is it really useful to salt the water in pasta?

Do you never salt the water in pasta? Or once in two? Well, be aware that salt actually plays an undeniable role in the flavor of our pasta! We will explain everything to you.

We sometimes add salt to the water in our pasta, without really knowing if it’s useful. But today, we can tell you: salting pasta water is useful, and allows you to give flavor to your pasta. For this to work, salt must be added at the start of cooking. Otherwise, it will be useless! Asked by Leisure TV, French chef Michel Sarran explains: “Basically, the pasta dough is not salty. By osmosis, the salt will therefore penetrate into the pasta“. For their part, chefs Philippe Etchebest and Hélène Darroze share the same opinion as their colleague: salting pasta water is obvious!

Salt prevents the pasta from sticking together

The other benefit of salt in pasta water is that it helps prevent the pasta from sticking together. The salt will in fact reduce the opening of the starch particles present in the pasta, and thus limit the gelatinization of the starch which is found on the surface of the pasta. Result: This prevents the pasta from absorbing too much water all at once and forming a gel. And obviously, non-sticky pasta is much more pleasant to eat!

Does salt have an influence on the boiling of water?

We tend to believe that salt causes the water to boil faster, but also an increase in the temperature of the cooking water. But it’s wrong ! Salt does not speed up the cooking of pasta at all, and has no influence on the boiling of water. There you have it, you know everything!
