This 32-year-old former policeman returned to the uniform to live his passion: baking. His desire: to create desserts. To carry out his project, he had to train and then follow a long course that took him through several stages. He was thus successively student, worker, teacher and manager of a pastry shop. Here he is manager of his own brand: Benoit Olejnik Pâtisserie. Open since May 3 in place of the Atelier des desserts, this new business is for Benoit Olejnik “the culmination of a long road”.
Leaving to come back better
Originally from the Jura, Benoit Olejnik began his professional career in the gendarmerie in Martinique where he settled at the age of 18. Four years later, he decided to return to the Jura to follow the CFA courses and earn his pastry diploma. The patent in his pocket, he made his debut in the south of France, at La Grande Motte. He also spent a year in Florida in the United States. Here he is back in the Ledonian basin, determined to stay there.
A specialty ?
For now, there is no specialty “Olejnik” yet. Nevertheless, there is one essential: “I have good feedback on the Paris-Brest, because it does not have the same shape as the classic. For the moment I think it will become a must, it will be something I do all year round, all seasons, all the time”, he warns with a laugh. But he also claims to be inspired by “the former boss’s range of cakes, because the customers were very keen on them”. This is something to delight regulars. At his side work a saleswoman and an apprentice pastry chef. The young trio lacks neither enthusiasm nor the will to develop the activity of this new Ledonian brand.
