Recipe for mince pies

The ingredients:

  • 1 organic lemon (zest and juice)
  • 1 organic orange (zest and juice)
  • 2 tbsp brandy
  • 1 tbsp port wine
  • 1 tbsp rum
  • 1 tbsp sherry
  • 120 g tallow (beef kidney fat)
  • 160 g sultanas
  • 100 g raisins
  • 100 g orange peel
  • 100 g currants
  • 1/2 teaspoon nutmeg (ground)
  • 1/2 teaspoon cinnamon (ground)
  • 1/2 teaspoon cloves (ground)
  • 160 g red apples (peeled and grated)
  • 500 g sweet dough
  • Egg white
  • Granulated sugar
  • powdered sugar

The preparation:

  1. Mix all dry ingredients together in a large mixing bowl. Now mix all the liquid ingredients together with the grated apples and let them steep in the refrigerator – for at least a week in a well-sealable mason jar.
  2. Preheat the oven to 190 ° C top and bottom heat.
  3. Roll out the sweet dough about two centimeters thick and place on a baking sheet. Chill for about 30 minutes.
  4. Now cut out the individual pieces for the mince pies with a clean knife and place them in a baking sheet for mince pies. Carefully prick the base of the pastry pies with a fork so that they do not rise too much during baking.
  5. Now put a teaspoon with the homemade mince pie filling in the middle of the pies and brush with egg white so that the mince pie lids will hold better later. Put the mince pies back in the fridge for 30 minutes to rest.
  6. Now put the lids on the mince pies, brush the egg white again and carefully prick with a fork so that the steam can escape. Sprinkle with pearl sugar.
  7. Bake the mince pies on the middle rack of the oven for around 15 minutes until golden brown – allow to cool.
  8. Now sprinkle the mince pies with powdered sugar and serve. For a more festive look, the lids of the mince pies can also be shaped into a star using a cutter.
