It doesn’t always have to be cheese and potatoes. These extraordinary creations provide variety on the raclette oven.

Raclette is the ultimate New Year’s classic. For many, the barbecue with the small pans is just as much a part of the last day of the year as the fireworks or champagne at midnight. Traditionally, potatoes, gherkins and silver onions are served with the melted cheese. If you want to broaden your culinary horizons, try one of the following alternatives.

Mediterranean starters from the pan

The Caprese salad is one of the most popular appetizers far beyond the borders of Italy. It can be enjoyed not only cold, but also warm from the raclette oven. Place the halved cherry tomatoes and olives in a pan, season with salt and gratinate with mozzarella. Remove after a few minutes and serve with basil, olive oil and fresh pepper.

If you prefer Mexican cuisine, add tortilla chips, kidney beans, jalapeños and corn to the halved tomatoes. Spread cheese and a spicy salsa on top, bake for four to eight minutes and the Tex-Mex-style raclette is ready.

Small pizzas or big meat treats

Main dishes, such as mini pizzas, can also be made in the small pan without much effort. You can buy ready-made pizza dough in the supermarket. Cut to fit, it can be easily placed in the pan. Important: Before you start topping, the raw dough has to be put under the raclette grill so that it can bake completely. When it has risen and taken on a light tan, you top it with your favorite ingredients.

It works the same way with tarte flambée. This dough is also available in ready-made form in the store. Zucchini, goat’s or feta cheese taste just as good as sour cream, bacon and spring onions. Particularly aromatic: Drizzle honey over the Tarte Flambee after baking.

You can also score points on New Year’s Eve with a combination of beef fillet, avocado and feta. To do this, cut the beef fillet into bite-sized strips and fry them on the griddle for a few minutes. Put the pieces in the pan, add avocado, oregano, feta and grill. If you’re not a fan of the taste of warm avocado, substitute mango for it. This gives the dish a fresh, fruity note.

Sweet raclette

Speaking of fruity: The raclette oven is also suitable for preparing desserts. How about an Apple Crumble, for example? Cut an apple into thin slices and sprinkle with lemon. For the crumbles, mix together the butter, sugar, flour and cinnamon until you get a crumbly consistency. Then place the apple slices in the pan, crumble the crumble over them and bake everything until golden brown. Serve with a scoop of vanilla ice cream if you like.

Once the dough has been prepared, you can even bake pancakes in the small pans. For ten servings, mix 220 milliliters of milk, 220 grams of flour, three eggs, two tablespoons of sugar and 30 grams of melted butter until smooth and refrigerate until the evening. Then put two tablespoons of dough in a raclette pan, garnish with berries, banana slices or chocolate and bake for about ten minutes.
