“We started by checking out the butchers in the country. At that time there were still around 270 companies,” Helmut remembers. Restaurateurs quickly became customers of the two-person operation. “When we parked our truck in front of large hotels, neighbors kept coming with their knives. The cluster that formed in front of our mobile workshop grew bigger year by year,” laughs Waltraud.
