Hard to believe, but the universally popular breakfast dish was served by its inventor as an easily digestible dinner in his sanatorium in Zurich. The Swiss doctor Maximilian Oskar Bircher-Benner (1867-1939) became acquainted with muesli in a mountain hut on a walk with his wife. When he got home, he reformed the “porridge” made from grain, fruit, milk and nuts that was served there, first calling it an apple diet dish and then Bircher muesli. Since then, the muesli with grated apples, soaked oatmeal, lemon juice and nuts has been called Bircher muesli.
