An Italian classic in a Spanish guise. The paprika risotto with Pimientos de Padrón made from Italian risotto rice paired with Spanish Manchego cheese and delicious pimientos, the small peppers roasted in olive oil, combines delicacies from the Mediterranean into a wonderful dish. Friday: Chicken skewers with romanesco salad

If the weather permits, this recipe is perfect for the last barbecue evening in August. Marinated in soy sauce, rounded off with rosemary, maple syrup and a splash of lemon, the chicken skewers are served on a crisp Romansco salad with cherry tomatoes and mini cucumbers. We end the week with a particularly delicious low-carb dish. For the low-carb quiche, some of the flour for the shortcrust pastry is replaced with nuts.
