This salad literally screams for summer: The apricots make it nice and fruity, Roquefort in the dressing gives the whole thing the icing on the cake. For this vegan Asian salad, we steam the aubergines – this makes them soft without getting soaked in oil (as with frying). The tofu is breaded with rice flour and sesame and is particularly crispy, while coriander and cashew nuts round off the dish. The recipe: Eggplant salad with sesame tofu
