Pancake recipes without eggs, without milk, and or without gluten

We agree, pancake dough is not rocket science! But where it gets tough is if, for medical or ethical reasons, you can't eat one or more of the ingredients that make it up. This is why we unveil all our "pancake without …" recipes to make (and taste) pancakes anyway.

In order to offer you our recipes, we are inspired by the traditional pancake recipe that we then decline according to your dietary restrictions.
To make traditional pancakes, you will need the following ingredients (for about 8 people):
250 g of flour, 4 eggs, 1/2 liter of milk, 1 bag of vanilla sugar, 1 pinch of salt, 50 g of butter.
The pancake dough is then prepared a few hours in advance, by mixing all these ingredients until you obtain a dough without lumps, which will rest for a while before being cooked.

Pancakes without eggs

You can't make an omelet without breaking some eggs, but pancakes, yes! For that, you just have to "forget" the eggs in the recipe for traditional pancakes! You just had to think about it …
If it's just the egg yolk that is your problem, there is also a pancake recipe for you, made with egg whites. In this case, go back to the basic recipe by separating the whites from the yolks and turning them into snow. You will only incorporate these (gently) into your pancake batter.

Pancakes without butter (no oil)

This time, we reveal the recipe for pancakes without butter or oil, without fat. Nothing very complicated either: just do not put butter in the dough and cook your pancakes in a non-stick pan to avoid adding oil.

Pancakes without egg and without butter

Pancakes without butter or eggs, is it possible? Yes of course ! Basically, you just have to leave it alone … but suddenly, it may be useful (and better) to readjust the proportions of the other ingredients.

Ingredients for 4 persons :
– 240 g of flour,
– 600 ml of milk, whole if possible,
– 1 tablespoon of oil,
– a little vanilla sugar and a pinch of salt.

Pancakes without milk

This recipe for pancakes without milk will appeal to some … In fact, milk is not essential, it can be replaced by water, sparkling water or even beer. The best (in our opinion) is to replace the milk with a mixture of half water, half beer. Then let this pancake batter rest for at least 1 hour in the refrigerator.
Ah, and do not panic, the alcohol evaporates during cooking, these pancakes are quite edible by children and pregnant women.

Gluten free pancakes

When you have to eat gluten-free, you either buy gluten-free flour for baking, or you get used to making alternatives to wheat flour. The mixture that we suggest you to make consists of 6 measures of rice flour, 2 measures of potato starch, 1 measure of cornstarch and 1 tablespoon of guar gum. the aim being to obtain 250 g with proportions. Then, make your pancake dough as if it were wheat flour!

Another possibility of gluten-free flour: make a mixture of 170 g of rice flour and 80 g of chestnut flour; or 170 g of brown rice flour for 80 g of soya flour or chickpeas.

Small detail: Be aware that gluten-free pancakes are less flexible than their wheat cousins. They break more easily. For small pancakes, no problem, but for large ones, you will have to be agile …

The total: gluten-free, lactose-free and egg-free pancakes

In this gluten and lactose free pancake recipe, we zap the wheat flour, milk, eggs and butter. For 4 people, mix 200 g of corn starch, 500 ml of "vegetable milk", 80 ml of water, a little sugar, 2 teaspoons of neutral oil. Mix as for the other recipes, until you obtain a dough without lumps (this is a constant in all pancake recipes) and let stand for 1 hour in the fridge.

Pancakes without sugar

Making pancakes without sugar is no problem: just don't put vanilla sugar in the dough. And then, for the filling, if really it's a sugarless pancake you want, substitute this one with stevia.
