Preparing chanterelles: it's that easy

There are tons of ways you can make chanterelles. Whether fried, in soup or as a ragout – we'll show you how versatile the mushrooms are.

Prepare the chanterelles in the pan

  1. Regardless of how you want to prepare the mushrooms, you must first clean the chanterelles. Therefore you need a brush and a knifewith which you can cut off the stem ends. Alternatively, you can toss the chanterelles in flour and then rinse them with water. Before you process them further, dry them briefly on kitchen paper.
  2. Chanterelles should never be eaten raw as they are contain chitin, which is difficult to digest. That's why it's best to fry them briefly in a pan: heat a little fat in the pan and then add the mushrooms. For more taste you can also finely chopped onions or diced bacon Add.
  3. First fry the chanterelles a few minutes on each sidebefore reducing the heat and simmering for another 10 minutes. Finally season with salt and pepper. Then you can make a delicious mushroom pan out of it, for example.

Prepare chanterelles: chanterelle soup

Ingredients for 4 servings:

  • 400 g chanterelles
  • 1 onion
  • 1 clove of garlic
  • 2 tbsp oil (or butter)
  • 800 ml vegetable stock
  • 200 g whipped cream
  • Salt pepper

Preparation:

  1. Clean the chanterelles. Peel the onion and garlic clove and cut into small pieces.
  2. Heat the oil in a large saucepan and briefly fry the vegetables in it.
  3. Deglaze with the vegetable stock and simmer the chanterelle soup for about 20 minutes.
  4. Then take the pot off the stove, stir in the cream and puree the soup with a hand blender. Season to taste with salt and pepper.

Prepare chanterelles with pasta
