Pointed cabbage is full of vitamins, making it the perfect winter vegetable. We'll tell you how versatile you can prepare pointed cabbage and present delicious recipes.

Preparing pointed cabbage: you should know that

is a vegetable cabbage related to white cabbage, which got its name from its pointed head. With only 24 kilocalories per 100 grams and plenty of fiber the vegetables are very healthy.

The special thing about pointed cabbage: It contains a lot of ascorbic acid, which is a precursor of vitamin C. Ascorbigen is only converted into vitamin C when heated – However, the vegetables should not cook too long so that the water-soluble vitamin does not get into the cooking water.

Prepare pointed cabbage vegetables

If you want to serve pointed cabbage as a vegetable side dish, you should first remove the outer leaves, quarter the cabbage and cut out the stalk. Then cut the pointed cabbage into strips. Heat the butter in a saucepan, sauté the cabbage strips briefly and Cook with the lid closed for about five minutes. Possibly add a little water (or vegetable broth for more flavor) and season the vegetables with salt and pepper. If you like, you can season the pointed cabbage with caraway or nutmeg – that's it!

Prepare pointed cabbage in the oven

It becomes even easier if you prepare the pointed cabbage in the oven, for example as a casserole or with salmon steaks with wasabi mayo. For this you need the following ingredients:

  • 4 salmon fillets
  • 300 g pointed cabbage
  • 200 ml fish stock
  • 30 g fresh ginger
  • coarse sea salt
  • 2 teaspoons of olive oil

Preparation:

  1. Preheat the oven to 160 degrees, fan-assisted 140 degrees, gas mark 2. Rinse the salmon fillet and pat dry with kitchen paper. Clean and finely chop the pointed cabbage.
  2. Bring the fish stock to the boil. Add cabbage and cook in it for about 30 seconds. Put the fish stock, cabbage and salmon in an ovenproof dish.
  3. Peel and finely dice the ginger. Sprinkle the salmon with coarse sea salt and ginger and drizzle with olive oil. Bake in the oven for about 10–12 minutes.

Cabbage rolls with pointed cabbage

Cabbage roulades are usually wrapped with savoy cabbage or white cabbage leaves, but pointed cabbage is also ideal, as these chard and cabbage roulades prove. The leaves must be briefly boiled in salted water beforehandso that they can be shaped better and not break.

Prepare pointed cabbage raw

Pointed cabbage salad is a great way to eat the vegetables raw – In contrast to many other types of cabbage, pointed cabbage is quite digestible. You can of course refine the salad with other ingredients of your choice.
