Preserving cherries: It’s that easy

We’ll show you how to cook cherries. Cherries from the glass used to be the favorite compote for grandma – today we make ourselves happy with them.

Boiling cherries is a great way to manage large quantities of cherries from your own garden, but also to take the taste of summer with you into the cold season. And it’s child’s play too.

Boiling cherries: the ingredients

  • 1 kilogram of cherries
  • 1 liter of water
  • 400 grams of sugar
  • 4 mason jars of 500 milliliters each
  • To taste: cinnamon, cloves or anise

Allow about 50 minutes for the cherries to boil down.

Boil down cherries – step by step

  1. Jars and lids with hot water rinse and so sterilize. Drain the glasses.
  2. Meanwhile the cherries wash, drain and remove the stems. If you want to save yourself the fight with the stones while eating, pitted the cherries in advance. You can do this, for example, by placing the cherries with the stem hole facing up on the opening of an empty bottle and poking a straw through the cherries so that the core falls into the bottle.   3. The cherries pour into the glasses. Make sure that you fill the mason jars up to about two centimeters below the rim.
  4. Now the Making syrup: Bring a liter of water to the boil in a saucepan and stir in the sugar. Bring the sugar water to the boil and stir again and again until the sugar has dissolved. If you like, you can now add a spice of your choice (cinnamon, anise or cloves) and give the cooked cherries a special aroma.
  5. Place the glasses on a heat-resistant surface and just below the edge (approx. 5 mm) fill with the syrup. The cherries must be completely covered at the end. Wipe the glasses with a cloth to remove any residue and avoid contamination. Then close tightly.
  6. Now line a large saucepan with a clean tea towel, place the glasses side by side in the saucepan so that they do not touch, and fill the saucepan with water so that the glasses are three-quarters in the water. The water in the pot bring to a boil and then cook for 30 minutes.
  7. Then take the pot off the stove, let the glasses and the water stand in them and let everything cool down completely. Take the cooled glasses out of the water bath and let them rest overnight. Then label store in a cool, dark and dry place. They last for at least six months.

Preserving cherries in the oven: that’s how it works

As an alternative to the method in a hot water bath, you can also wake the cherries in the oven. For this, steps 1-5 remain the same. In the meantime you can open the oven 150 degrees preheat.
