Prepare a classic shortcrust pastry for the base. For this you need:

  • 300 g plain wheat flour
  • 200g butter, cold cut into cubes
  • 100 g of sugar
  • 1 pinch of salt
  • Zest of an organic lemon
  • 1 egg

Mix all ingredients for the shortcrust pastry, then wrap in cling film and leave to rest in the refrigerator for about 1 hour.

For the topping you will need:

  • 500 g pumpkin sauce (e.g. cooked Hokkaido pumpkin)
  • 150 g cane sugar or normal sugar
  • 3 eggs
  • 1 pack of cream cheese
  • a pinch of salt, some cloves, nutmeg and cinnamon powder

Mix the pumpkin, cane sugar, cinnamon, ginger and clove powder, beaten eggs, a pinch of salt and cream cheese. Take the shortcrust pastry out of the refrigerator and press it into a well-greased round shape. Now pour the pumpkin filling over it and bake in the oven at 180 degrees for about 1 hour. Before serving, you should let the cake cool completely.
