Imagine you are sitting in the middle of a sunny piazza. Full of anticipation for pizza or pasta. But then the waiter comes by with a delicious surprise: to sweeten the waiting time, a basket with crusty olive bread lands on the table. A suitable appetizer or side dish for many occasions! The best part? The delicacy is very easy to make yourself and only requires a few simple steps.

How to create the delicious bread:

Ingredients:

  • 300 ml lukewarm water
  • ½ cube of yeast
  • 1 tsp salt
  • ½ tsp sugar
  • 3-4 sprigs of rosemary
  • 6 tbsp olive oil
  • 500 g flour (type 405)
  • 200 g green olives (pitted)
  • 1 tbsp capers
  • Optional: some oregano and thyme

A few steps lead to success:

1. For the dough you first have to activate the yeast. To do this, put lukewarm water in a measuring cup, crumble the yeast and add it. Now add salt and sugar and mix everything together. The yeast mixture should no longer have any lumps.

2. Rinse the rosemary under running water and drain. Then remove the needles from the stem and chop finely. Add olive oil and rosemary and, if you like, stir in thyme and oregano into the yeast mixture.

3. Place the flour in a bowl and form a well, add the yeast mixture and knead the dough well using a dough hook or food processor. After about five minutes you should have a smooth dough.

4. Let the dough rest for about 20 minutes.

5. Meanwhile, finely chop the olives and capers. After the resting period, these ingredients are kneaded into the dough.

6. Lay a piece of parchment paper on your baking sheet and place the dough on it. Shape the bread by gently pulling the ends apart. Meanwhile, you can twist the ends in opposite directions for a special bread pattern—but it’s not a must.

7. Cover the dough with a kitchen towel and let it rest for another 20 minutes. During this time, preheat the oven to 190 degrees circulating air (210 degrees top/bottom heat).

8th. After the resting time brush the top and sides of the bread with olive oil and then bake for approx. 25 – 30 minutes. Before slicing, the bread should cool down well.

How to best enjoy the fresh bread

The olive bread is very versatile and can be combined – and convinces at the dinner party as well as at breakfast or brunch. It can be served either as an accompaniment to a barbecue or as an appetizer for pizza or pasta, for example with a little fresh olive oil for dipping. We wish you bon appetit!
