Coconut macaroons convince with the irresistible symbiosis of airy whipped egg white and crispy, aromatic coconut flakes – and they do not use any flour at all.

When creamy whipped egg white meets tender desiccated coconut, the result is wonderfully juicy coconut macaroons. The airy cookies are baked in no time and are perfect for beginners, children and of course everyone who loves coconut.

Coconut macaroons: quick cookies for the guests

The coconut macaroons only take 20 minutes to prepare. Perfect when the cookie plate needs to be filled quickly or a visit has been announced spontaneously. Thanks to the sugar, the biscuits will keep for a long time. They can be stored airtight for up to three weeks. To prevent the coconut macaroons from getting too dry, strictly adhere to the baking time. As soon as the surface turns a light golden brown, they are perfect.

Incidentally, coconut macaroons can be easily transformed into nut macaroons. Simply replace the specified amount of desiccated coconut with ground hazelnuts.

Coconut macaroons: the ingredients

  • 4 egg whites
  • 1 pinch of salt
  • 250 g desiccated coconut
  • 125 g of sugar
  • 2 packs of vanilla sugar
  • approx. 40 wafers

Coconut macaroons: the preparation

  1. Preheat the oven to 150 ° C fan oven.
  2. Beat the egg white together with a pinch of salt until stiff. The mass should be very firm.
  3. Slowly add the sugar and vanilla sugar to the egg white while continuing to stir.
  4. Fold in desiccated coconut.
  5. Spread the wafers on two baking sheets lined with baking paper. Place the coconut mixture on the wafers with two spoons or an ice scoop scoop.
  6. Bake coconut macaroons in the preheated oven for about 10-12 minutes.
