The Instagrammer made us a salad that combines quinoa, carrot And feta cheese. Everything is raised from pomegranate seeds and a sauce Maple syrup and at balsamic vinegar. Lovers of sweet and sour and delicately tangy flavors will love it! This colorful and balanced vegetarian recipe should be unanimous at the table. Let’s go for a little cooking class.

The recipe for quinoa, carrot and feta salad

For this recipe intended for 2 people, mix 400 g cooked quinoa with 300 g of raw carrots cut into slices, and 1 red onion peeled and cut into pieces. Season with 1 tablespoon of parsley, 1 teaspoon of smoked paprika1 tablespoon of maple syrup, 1 tablespoon of balsamic vinegar, 5 tablespoons ofolive oiland 2 tablespoons of salty soy sauce. Mix everything well and pour the mixture onto a baking tray. Spread well and bake for around 30 minutes at 200°C. Remember to mix 2 or 3 times during cooking!

Pour the preparation into a salad bowl, then add 1 block of diced feta70 g pomegranate seeds, 50 g toasted pine nuts and 1 handful of fresh herbs. Season with a drizzle of olive oil. It’s ready !

To prepare this recipe, Charlie.ma.vie has a little tip: instead of putting all the ingredients in a salad bowl and mixing them with a spoon, she pours them into a box and closes the lid tightly. Then just shake it all up so that the ingredients mix perfectly!

You can prepare the recipe with white quinoa, or a mixture of white, red and black quinoas, to bring even more color. Before cooking it, remember to rinse with cold water to remove saponin, this substance which can make it a little bitter.

You do not have Maple syrup ? Of Honey liquid will do the trick! Opt for example for acacia honey, which has a mild flavor.

For the fresh herbs, it’s up to your taste. You are free to concoct this salad with parsley, coriander, chervil or mint. The choice is wide!

Since the feta and soy sauce are already salty, there is no need to add salt to this salad.
