Enjoy raspberry cake all year round

We would love to have raspberry cake all year round. A look at the seasonal calendar, however, shows that the raspberry season in Germany only lasts from June to September. Because that's far too short for us, we use the rest of the year for raspberry desserts, raspberry cakes and other recipes with raspberries.

Bake a cake with frozen raspberries

If you bake with frozen raspberries, you should pay attention to a few things: If possible, process the fruits in a frozen state – this way they stay in good shape and do not become mushy.

With raspberry cake you put the frozen fruit on the cake base and then pour the topping over it. At Raspberry cake with filling First let the cream just gel and only then stir in the frozen fruit. The raspberries usually thaw in a few minutes and keep in good shape in the cream or under the cake topping.

If you Raspberries as decoration want to use, also use frozen fruit. Put the raspberries in their place and let them thaw there.
