Red alert ! Our selection of the fifteen best raspberry pies

When you carefully examine the windows of a neighborhood bakery, you still too often find red fruit pies throughout the year. Fortunately, the use of raspberries only in high season tends to become widespread. While the first fruits grown in greenhouses appear in mid-April, raspberries grown in the ground are present on the markets from mid-June to October. In France, they are mainly produced in the Rhône-Alpes region and in Corrèze. While there are many varieties, tulameen is considered by all to be the most balanced with its sweet and tangy taste.

Until the 19the century, raspberries were mainly consumed alone, associated with other red fruits or in the form of jam, compote, ice cream, confectionery or syrup. Nowadays, they can still be eaten on their own, accompanied by sugar and fresh cream, or used as a filling for pies. Traditionally, the raspberry tart is made of a pastry (shortcrust pastry, shortbread, sweet, puff pastry), almond cream or whipped cream and fresh raspberries.

After having tasted and rated more than thirty cakes according to various specific criteria (visual, texture of the dough, flavor of the cream, taste quality of the raspberries, without forgetting the famous quality-quantity-price ratio), here is our list of winners – in no particular order – for 2022.

Our opinion : Lovers of excellent whipped cream will be delighted with this devilishly generous tart which only keeps the essentials to sublimate the precious taste of the fruit. Cooking the crispy dough perfectly balances the whole.
