Sandwiches without bread, recipe ideas

For our summer picnics, our work meals or our BBQ or festive buffets, sandwiches are second to none. Easy to eat, the sandwich can be eaten with both hands and fingers. Only here, we do not always want to eat tons of bread. In addition, ham and butter is "so twentieth century"! So here are 10 recipe ideas that revolutionize the sandwich: without bread!

More and more people are choosing a diet which, if it is not 100% gluten-free, at least has less gluten. Whether you want novelty, lightness, gluttony of course or simply to avoid bread during certain meals, you can replace the bread in your sandwich with other foods.

1. The eggplant sandwich

Cut two thick slices of eggplant (organic because you need to keep the skin) and oil them very lightly, sprinkle with a little salt and grill for ten minutes so that the flesh is cooked.
You can then put your usual ingredients in this sandwich or simply slip a nice slice of sheep's cheese or Comté cheese 2 minutes before the end of cooking, so that the cheese melts.

For a buffet, you can also cut your eggplant into thick slices and garnish them, like toast.

2. The bao burger

Asian cuisine always inspires us and this time, we swapped our American bun for a small steamed Chinese brioche. Much more airy than a round European bread, this brioche called bao is made from wheat flour and rice, and is cooked in a steamer basket.
We often find it stuffed with pulled pork, but we can also opt for a version with raw vegetables, chicken, tofu with herbs …

3. Salad rolls

What if you replaced the pita or the taco with a large salad leaf that you stuffed and then rolled up to get a crunchy wrap?
With carrots or cucumber cut lengthwise, ham, crumbled crab, shrimps, coriander or mint, diced tomatoes, pieces of falafel, tuna mixed with a little fresh cheese type saint -Morest, etc. There is no shortage of combinations.

4. The sushi burger

Cook Thai rice or Japanese rice in a rice casserole dish (it needs to stick a little), taking care not to add too much water, so that the rice is not soaked once cooked.
Even better: opt for a sticky rice, easier to shape afterwards.
Then in the palm of your hand, roll a large, well-compacted ball of rice, and cut it in half to use it as two pieces of bun. Make a sushi-style burger: raw salmon, tuna, avocado, cucumber … It's up to you!

5. The avocado burger

If, like me, you are a fan of avocado in the kitchen, you will love this option. Here we replace the burger bun with two halves of an avocado!
Inside, we will put fairly light ingredients: slices of cucumber, fresh herbs, fish eggs, smoked salmon … Don't forget to add lemon juice so that your avocado does not darken.

Little gourmet tip: a drizzle of sesame oil (an extremely fragrant oil that only requires a thin drizzle to savor the taste) inside and a pinch of gomasio, that mixture of roasted sesame and salt, on top, you will border on taste nirvana.

6. An omelet wrap

Swap your wheat leaf for a thin cold omelette in which you will roll small fresh things!
On a buffet, roll cherry tomatoes in basil leaves or fresh spinach, and thin slices of Italian ham, hold together with small wooden spikes, delicious!

7. The nori sheet is your friend

Another alternative to the sandwich: rolls in nori sheets (which the Japanese call onigiri), which make for healthy and complete sandwiches. We roll a ball of vinegar rice, a piece of cucumber, avocado and surimi california roll, we wrap in cling film and we go for a picnic. Don't forget a small bottle of soy sauce!

8. Mini mushroom burgers

For pretty (and above all healthy) burgers in mini format, use the caps of beautiful button mushrooms.
Better to bake them so that they stand better, but while passing them in the oven. Otherwise, in the pan, they will soften and you cannot use them for sandwiches.
Between two grilled hats, slip a slice of Aosta ham, a thin slice of seasoned tomato, a slice of cheese or a touch of fresh goat cheese, yum!
