Seasoning chicken: the perfect roast chicken

For a perfect roast chicken with a crispy crust and tender meat, you need a little dexterity. Especially on the right seasoning it depends. However, if you follow our tips, nothing should go wrong.

The marinating

Recipe: Spice mix for roasted chicken like on a chicken cart

Ingredients for 1 whole chicken, approx. 1000 g each

  • 1 clove of garlic
  • 2 teaspoons of paprika powder, smoked
  • 2 teaspoons of coarse sea salt
  • 3 pinches of pepper
  • 4 tbsp oil

Finely chop the garlic. Mix all ingredients well with the oil in a bowl. Rub the washed and dabbed dry chicken evenly with the marinade and massage in well. Then cook in an oven preheated to 230 degrees top / bottom heat for about 60 to 80 minutes.

Important: After about 40 minutes, the chicken should be covered with aluminum foil or cooked directly in a covered roaster so that the paprika does not burn on the skin.

Then you can grill, fry or bake the chicken breast in the oven for about 12-15 minutes.

How long should you marinate a chicken?

Only the chicken breast is suitable for long marinating. For best results, it is advisable to marinate the chicken breast for about three to five hours. With a whole chicken, it is sufficient to brush the marinade right before cooking and, if necessary, brush the marinade again during the cooking process.

This will keep your chicken breast juicy

Make sure the temperature is moderate when roasting, grilling or baking. You can use higher temperatures for searing, but you should turn them down afterwards to keep the chicken from drying out. Another tip is that Wrap the chicken breast in aluminum foil or cook it covered in the pan. So the leaked liquid stays inside.
